Ingredients:

  • 1 lb ground beef (80/20 blend)
  • 8 small flour tortillas
  • 8 slices American cheese
  • Salt and black pepper to taste
  • 1/2 cup finely shredded iceberg lettuce
  • 1/4 cup diced white onions
  • 1/4 cup dill pickle slices
  • Burger Sauce: 1/4 cup mayo, 2 tbsp ketchup, 1 tbsp sweet relish, 1 tsp mustard.

Step-by-Step Instructions:

  1. Prep the Sauce: In a small bowl, whisk together the mayo, ketchup, relish, and mustard. Set aside.
  2. Smash: Heat a large cast-iron skillet over medium-high heat. Take a golf-ball-sized portion of ground beef and press it flat onto a flour tortilla, spreading it completely to the edges. Season generously with salt and pepper.
