Treat yourself to the ultimate savory, sweet, and salty masterpiece: The Bacon Jam Double Smashburger. The crispy edges of the beef paired with the caramelized, sweet bacon jam will blow your mind.

Ingredients:

• 1 lb ground beef (80/20 blend, divided into 4 loosely packed balls)

• 4 slices American cheese

• 2 brioche buns, buttered and toasted

• 1/2 lb bacon, chopped

• 1 large yellow onion, finely diced

• 2 tbsp brown sugar

• 1 tbsp apple cider vinegar

• Salt and black pepper to taste

Steps:

  1. Make the Jam: In a skillet, cook chopped bacon until crispy. Remove bacon, leaving 1 tbsp of fat. Sauté onions in the fat until soft. Add brown sugar, vinegar, and cooked bacon. Simmer until thick and jammy (about 10 mins). Set aside.
  2. Smash the Patties: Heat a cast-iron skillet until smoking hot. Place beef balls in the pan and immediately smash them completely flat with a spatula. Season generously with salt and pepper.
  3. Flip and Cheese: Cook for 2 minutes until a deep brown crust forms. Scrape under the patty, flip, and immediately add a slice of American cheese to each. Cook for 1 more minute.
  4. Assemble: Stack two cheesy patties on the toasted brioche bottom bun. Top generously with the warm bacon jam and close with the top bun.

Secret Tip: Don’t overwork your ground beef! Keep it cold and loosely packed before smashing to guarantee those incredibly crispy, lacy edges.
